<p>I have gained expertise in developing dairy and plant-based cheese products using defined micorbiological routes, with a focus on generating bioactive peptides and elucidating their role in enhancing the functional potential of food as part of my PhD work. I have also explored meta-omics approaches to study traditional plant-based fermented foods, combining metagenomics and metabolomics to understand how the microbiome and metabolome of the fermented foods contribute to their functional profile.</p><p>At FNS, under the Biotech and Plant-based Food Group, my research focuses on development of high-throughput (HT) pipelines that combine HT screening of microbial strains with simultaneous application of advanced metabolomics techniques, to link strain-specific fermentation performance to metabolome transformations in hybrid systems that integrate dairy and plant side streams. I will integrate these datasets into chemometric and predictive frameworks to identify, characterize, and forecast targeted metabolite release, thereby guiding the rational design of next-generation hybrid functional foods with tailored flavor, aroma, and health-associated properties.</p>
