Büsra Gültekin Subasi


Büşra Gültekin Subasi is a postdoctoral researcher at division of Food and Nutrition Science working on plant-based protein extraction and their functionalities as a part of a wholistic bio-refinery approach for industrial upscaling. The goal is to develop a sustainable protein extraction method from pea varieties for potential food applications. She also have experience on different non thermal food processing methods particularly for the physical modifications of plant-based proteins for improved functionalities at the interfaces.
