Nuria Majaliwa is a PhD student at the division of Food and Nutrition Science. Her project is focused on studies on protein-tannin interactions during mechanical extraction of clear banana juice. Banana is an important crop in Tanzania but due to high post-harvest losses, technological developments have been made to process the fruit into juice before it perishes. However, there are several challenges with extraction of clear banana juice, the tannins, especially condensed tannins have a tendency of forming insoluble complexes with other compounds, which limits commercialisation of banana juice. The objective of her research is to investigate the mechanisms for the release of clear banana juice during the mechanical extraction process. The goal is that the findings will contribute to enhanced productivity and a more sustainable use of banana crops.
