Hanna is a PhD student at the division of Food and Nutrition Science. Her research is mainly focused on the utilization of seaweeds as a novel source of vegetarian proteins, but also as a source of unsaturated fatty acids, vitamin and minerals. The goal with the research is to develop new, scalable and food grade processes to extract the proteins from the seaweed matrix; partly as a way to improve digestibility and bio-availability of the proteins, but also taste. Further, the shelf-life of seaweed during different types of drying and subsequent storage is evaluated with respect to rancidity, degradation of vitamins and color change. A goal to find mild and cost effective handling and storage solutions prior to processing of the seaweed biomass.
